Healthy No-bake Brownies

brownies on a plateYes, you read right. A healthy brownie, and you don’t even have to bake it. This little brownie is filled with goodness: walnuts, raisins, coconut, cocoa, honey, dark chocolate and….

healthy brownies oatmeal… ok fine. There’s a bit of butter in there, but, even so, this brownie is still an excellent alternative to the average fudgy baked brownie. Also the flour is replaced by ground oatmeal! Let’s get started.

Ingredients:

  • whole grain oatmeal, 2 1/2 cups, ground
  • butter, 7 tablespoons
  • cocoa, 1/3 cup
  • raisins, 1/2 cup
  • walnuts, 1/2 cup, chopped (optional)
  • coconut, 1/3 cup, flaked
  • honey, 4 tablespoons
  • dark chocolate, 112.5 g

Refrigerate for 2 hours.

  • Measure 2 1/2 cups of oatmeal and throw it in a blender. Blend until it starts to resemble flour. It doesn’t have to be a very fine powder. It’s ok if you can see a few whole oats hanging around in there. Put it aside for later use.

  • Next, on low heat, in a medium saucepan, melt 7 tablespoons of butter.
  • When the butter is fully melted, add in 1/3 cup cocoa powder and mix until well combined.
  • Take the saucepan off the heat, then add in the 2 1/2 cups of oatmeal flour. Mix until you cannot see bare flour.
  • Add in 4 tablespoons of honey and mix again.

  • Chop up the walnuts small, or alternatively, place the walnuts in a plastic baggie and smash them.

  • Next, add 1/2 cup raisins, 1/2 cup walnuts and 1/3 cup coconut to the flour mixture. I absolutely love coconut. I try and sneak it into any recipe I can :) Now put the mixture back on low heat, while you mix everything together. When you are finished take your mixture off the heat.

  • Take an 8 x 8″ baking pan and line it with parchment paper or butter it. *I recommend using parchment paper because you’re not using extra butter. Plus when you use parchment paper, the brownies come out extremely easy.

  • Now, chop the chocolate with a sharp knife. To melt it, use a bain-marie. If you don’t have a fancy, professional bain-marie, you can improvise. All you need is a metal container and either a bowl or a pot slightly bigger. If you’re using a bowl, microwave the water for 2 minutes so it’s nice and hot. If you’re using a pot, just put the heat on medium-low. Place the chocolate in the metal container and stir it until its fully melted.

  • Now, with a spoon, pour in all the delicious melted chocolate. Spread it evenly, covering the whole surface.

  • When you’re done spreading the chocolate on top, cover the pan with plastic wrap and refrigerate for 2 hours or overnight. When the brownies are set, cut twice vertically and twice horizontally, so you’ll have 9 little brownies.
